Sweeten It Up With Pure Canadian Maple Syrup

Maple syrup is a sweetener produced from the sap of maple trees. It was found to have been produced way back in ancient times, before the Europeans colonized North America. Thus, the Native Americans are recognized as the first producers of maple syrup. Before winter, maple trees produce sugar which is stored in their roots. Around early spring, the sugar rises and at this time, sap is tapped from these maple trees and later concentrated in pure Canadian maple syrup. The thawing period, or the time between winter and spring, is often called the sugaring season. This is because at this time, the sap is at its sweetest. However, with the arrival of spring, the maple tree undergoes biological changes turning the sap unpalatable.

One of the most popular methods to collect sap is by boring holes on the trunks of maple trees. These holes are then fitted with spouts so the sap can flow out. A bucket is placed directly at the opening so that it can collect the sap. They are then left there until they are filled. Once the bucket is filled, it is collected and transferred to larger vessels where they are boiled until caramelized. The process is done without the addition of chemicals and preservatives. Another method is the use of plastic tubing. The tubes are injected into the trunk and suctioned out into a large container. This method is less labor intensive as compared to the previous. Through reverse osmosis, water is removed from the sap. The whole process has to be monitored closely to prevent bacterial contamination. 1 liter of maple syrup can be produced from boiling approximately 40 liters of sap; hence a large volume needs to be collected to produce large quantities of maple syrup.
